Many of you asked for the pumpkin cookie recipe I mentioned in Mondays post, so here it is. They are super easy to make and a fun afternoon activity to do with kids.
2 sticks margarine
1 cup sugar
1 cup mashed pumpkin, fresh or canned
1 egg (can substitute egg replacer for allergies)
1 tsp vanilla extract
1 tsp baking powder
1 tsp baking soda
2 cups flour
1/2 tsp nutmeg
1/2 tsp cinnamon
1/2 cup semi-sweet chocolate chips (optional)
Preheat oven to 350. Cream margarine and sugar. Add wet ingredients and mix well. combine wet and dry ingredients mixing well. drop mixture by the tablespoon onto greased cookie sheet about 2 inches apart. Bake at 350 for about 15 minutes.
